I’ve been blogging for nearly three years now.
This may seem odd considering The Simple Foodie just launched in April of this year but as some of you may know, I actually had another blog before starting TSF.
It was called Recipe or Not which was my play on “ready or not” because I really wanted to start a blog and start cooking even though I didn’t have much experience in either category.
Why am I telling you all this?
I’m sharing because my birthday was on Monday and I’ve been feeling a bit nostalgic (birthdays do that to me) and this BBQ Chicken Pizza was one of my very first blog posts to ever hit the interwebs.
We’re talking back when I used a point-and-shoot camera, did Pioneer Woman-style step-by-step photos and loaded the post with super quirky ramblings. You can see all of my beginner-ness and overzealous pizza toppings here. (Does it really need white onion & green onion? I think not.)
I debated bringing this recipe back but I love it so much I couldn’t keep it tucked away in the archives collecting digi-dust. It’s remained a favorite of mine ever since I first posted it.
The BBQ sauce is what makes the pizza distinct and it’s totally up to the maker’s preference. You can go for a sweet sauce, smokey sauce, or even spicy sauce. I use my favorite Oklahoma BBQ sauce, Head Country, which a coworker so generously loaded me up with before I left OK. (Thanks again, Jamo!)
The red onion and cilantro give it some freshness and compliment BBQ sauce well. I haven’t perfected my own pizza dough recipe yet but I put a link to the whole-wheat dough recipe I used in case you’d like to use it also. I’ve used it several times and it works well.

BBQ Chicken Pizza
- 1 pizza dough (I used this recipe by Eating Well.)
- 2 boneless skinless chicken breast, diced & cooked (or smoked if you’re able)
- roughly 1/2 – 2/3 c. BBQ sauce (more or less depending on preference & dough size)
- handful of thinly sliced red onion
- 1 1/2-2 c. shredded cheese (mozzarella, Monterey Jack, cheddar; I used a combo. Add more or less depending on preference & dough size)
- handful of fresh cilantro leaves
Preheat the oven to 400º and prepare the dough according to the instructions. When the dough is ready, roll it out and place it on a baking sheet or pizza stone and bake it for 10 minutes. After 10 minutes, remove the crust from the oven and top it with sauce, cooked chicken, red onion, and cheese. Bake for another 10 minutes or until the crust is fully baked, the toppings are warmed through, and the cheese is melted. When the pizza is done, remove it from the oven and top it with fresh cilantro leaves.
Time saving tip: cook the chicken and prepare the other ingredients while the pizza dough is either rising or during the 10 minutes it bakes on it’s own.
