I find myself constantly on the verge of tears as I watch the Olympics. Seeing how hard these athletes have worked and just how amazing they are at their chosen sport is so inspiring. The drive and passion is absolutely incredible.
I only possess that drive and passion when I’m hangry and craving tacos. In which case, better get outta my way! I need tacos!
I suppose we can’t all be Olympic athletes and someone needs to keep the taco joints in business. ;)
Whether you’re busy keeping up with the Olympics or spending your days pontooning in the sunshine, this is the quickest and easiest summer recipe.
I’ve seen “nice cream” or banana ice cream around for a while, but my blender was not quite strong enough without requiring a lot of liquid.
I recently got a food processor and it was the first thing I made when I got it. I immediately fell in love.
The frozen bananas blend up so nicely to create this smooth and creamy texture that is remarkably similar to soft serve ice cream.
To add a little more interest to the recipe I added cocoa powder and a little bit of sunflower seed butter for just a touch of saltiness to balance the sweet.
Sunflower seed butter has been a recent obsession of mine but if you don’t have it, peanut butter would work just as well.

Chocolate Banana Soft Serve
- 3 c. frozen banana chunks (roughly 3 bananas, 4 if they’re small)
- 1/4 c. cocoa powder
- 2 T. nut butter (I used sunflower seed butter but also recommend peanut butter.)
- splash of almond milk (or any kind of milk), only if needed for consistency
- Optional topping ideas: chocolate chips, chocolate cookies, whipped cream, sprinkles
In a food processor, pulse the banana, cocoa powder, and nut butter a few times until the bananas are broken up. Then blend until the mixture becomes a smooth consistency. If it doesn’t seem to be coming together after a minute or so, add a splash or two of milk until the mixture is creamy and smooth. Serve immediately and top with desired toppings.
