I love fresh strawberries, blueberries, and raspberries equally as much but when it comes to jams or preserves, it’s raspberry all the way. Just somethin’ about it, you know?
These raspberry oat crumble bars are helping me get my berry fix during the winter. It’s like a little taste of Spring or Summer.
As I mentioned in my last post, I’m working on some healthy eating this year. (Like for realz.) Since crumble bars are typically all about the butter and sugar, I made some healthier swaps.
I was super happy with how these turned out but if I had any doubts, my hub’s response put them at ease. The first time I made them he said “I think this is my favorite thing you’ve ever made!”
So there you have it, folks. Oh and also? They only require six ingredients so go make them today!
Healthier Raspberry Oat Crumble Bars
- 1 1/3 c. rolled oats* ground in a blender to a flour-like texture
- 3/4 c. whole rolled oats*
- 2/3 c. coconut sugar
- 1/4 t. salt
- 1/2 c. melted refined coconut oil (use unrefined coconut oil for a coconut flavor)
- 1 t. vanilla extract
- 10-12 oz. (about 2/3 c.) raspberry preserves (I like Trader Joe’s organic reduced sugar raspberry preserves.)
Heat oven to 350°. While the oven heats, stir together the ground rolled oats, whole rolled oats, coconut sugar, and salt in a mixing bowl. Stir together the melted coconut oil and vanilla extract then pour into the dry ingredients. Stir the mixture until completely combined. Line a 9×9 baking dish with parchment paper. Reserve 3/4 cup of the oat mixture then press the remainder evenly into the bottom of the baking dish. Spoon small dollops of the raspberry preserves all over the oats then carefully spread the preserves evenly. Sprinkle the reserved 3/4 cup oats over the top of the preserves. Bake for 30 minutes. Let the bars cool completely** and then lift them out of the baking dish with the parchment paper and cut into bars.
* Use certified gluten-free oats if avoiding gluten.
**If you’re impatient like me, you can set the bars uncovered in the freezer to cool off quicker. :)
