This is a totally new type of post for me. I love seeing what recipes everyone else is trying so I wanted to share some that I can’t enough of these days. Here goes!
I’m obsessed with this Kale & Brussels Slaw with Quinoa by Sprouted Kitchen (pictured above – sans pomegranate). I only started liking brussel sprouts in the last couple of years and this salad makes me want more and more. The tangy dressing perfectly complements the kale and brussels. It’s healthy, hearty, and delicious!
Next up, Dark Chocolate Hemp Energy Bites from Minimalist Baker. These little babies are loaded with healthy fats that will leave you with a boost of energy and no sugar crash. They’re dark chocolate and naturally sweetened so really, just make them and thank me later. :)
Apparently I’m on a chocolate spree (but when am I not?) because these Gluten-Free Brownies by Salted Plains are also high on my list these days. For many reasons, I have been cutting back on how much wheat I’m consuming. Seriously, wheat is in EVERYTHING these days. And that is why these brownies are so perfect. As a wheat-replacement, they are made with almond meal or flour. And for the chocolate, I use a large 70% dark chocolate bar from Trader Joe’s, which turns these brownies into a dark chocolate heaven. The recipe is really simple and easy to make.
On a lighter, summery note, this Cucumber Basil Sparkling Lemonade from the Kale & Caramel cookbook is the stuff summer dreams are made of. It’s ultra refreshing and nourishing since it’s only sweetened with honey. I immediately made it twice the first time I tried it. Like I mentioned, the recipe is from the book, which is linked here. THINGS I’M LOVING OUTSIDE THE KITCHEN
This SheaMoisture Coconut Hibiscus Hand & Body Scrub – I really just use this for the scent. It’s bright and cheery and immediately lifts my mood. The soft skin is just an added bonus.
If you’re up for some more self-care, try a scented Epsom salt bath. It boosts your magnesium, soothes tired muscles, and helps you sleep better. My favorites are Dr. Teal’s Epsom Salt Soaking Solution – in Lavender and Eucalyptus Spearmint.
